Lemony Barley Garden Salad

  1. In a medium saucepan combine water or broth and barley.
  2. Simmer until all water is absorbed, approx 1 hour.
  3. When the barley is almost ready heat olive oil in a large saute pan.
  4. Add garlic, saute 1 minute Add bell pepper, zuccini and asparagus, saute 5 minutes or until soft.
  5. Stir in spinach and cook until just wilted.
  6. Add veggies to barley.
  7. Stir in remaining ingredients.
  8. Adjust seasoning to taste.
  9. Serve warm or cold.
