Warm Raspberry Sauce

  1. In food processor or blender, process raspberries until pureed.
  2. Transfer to top of double boiler and cook, stirring occasionally, 8 minutes.
  3. Stir in maple syrup and vanilla.
  4. In small bowl, dissolve kudzu in 14 cup cold water.
  5. Stir into raspberries.
  6. Mixture will be chalky-white at first.
  7. The color will deepen as kudzu dissolves.
  8. Reduce heat to low and cook, stirring occasionally, until thickened slightly, about 3 minutes.
  9. If sauce becomes too thick, add a teaspoon water.
