Chicken Oahu
- 4 c. herbed stuffing cubes
- 1/2 tsp. salt
- 2 1/2 to 3 lb. broiler-fryer, cut up
- 1/4 c. cooking oil
- 1 1/2 c. chopped celery
- 2 Tbsp. chopped green pepper
- 1 c. cream of mushroom soup
- 1/2 c. dairy sour cream or milk
- 1 (8 1/4 oz.) can crushed pineapple
- 1/2 tsp. paprika
- 1/2 c. flour
- 1/2 c. chopped onion
- 1 Tbsp. soy sauce
- Combine stuffing cubes, undrained pineapple and 1/4 cup water.
- Put in 13 x 9 x 2-inch baking dish.
- In bag combine flour, salt, paprika and dash of pepper.
- Add chicken a few pieces at a time, shake to coat.
- In skillet, brown chicken in hot oil. Place atop stuffing.
- Cover with foil.
- Bake at 375u0b0 for 1 hour.
