Black Bean Salad
- 1 (15 ounce) can black beans, rinsed and drained
- 1 (15 ounce) can white kidney beans, rinsed and drained
- 12 cup cucumber, chopped
- 12 cup sweet pepper, chopped
- 14 cup onion, chopped
- 14 cup fresh cilantro, minced
- 13 cup red wine vinegar
- 14 cup olive oil
- 12 teaspoon salt (optional)
- 14 teaspoon garlic powder
- 18 teaspoon pepper
- 6 lettuce leaves (optional)
- In a large, bowl combine the beans, cucumber, red pepper, onion and cilantro.
- In a small boiwl, whisk the vingar, oil and seasonings.
- Pour over bean mixture and toss to coat.
- Cover and refrigerate until serving.
- Using a slotted spoon, serve over lettuce if desired.
