Cajun Chicken

  1. Melt margarine with oil in shallow pan in oven 5 minutes.
  2. Coat chicken with flour and salt in bag.
  3. Bake chicken at 325u0b0 for 25-30 minutes single layer.
  4. While cooking combine oregano, thyme, basil, salt, paprika, peppers.
  5. Saute in large fry-pan garlic, onion, celery, green pepper, tomato until soft.
  6. Mix seasonings, simmer about 1 minute.
  7. Mix in broth the tomato sauce.
  8. Bring to boil and simmer 5 minutes.
  9. Lower heat and add chicken breasts and potatoes. Cook until potatoes are soft and chicken is done.
