Sweet Potato-Radish Noodles
- 1 small sweet potato, diced
- 1 cup water
- 14 cup frozen broccoli
- 1 (14 ounce) can diced tomatoes
- 4 radishes, diced
- 1 beef bouillon cube (could substitute vegetable to make this recipe vegetarian)
- 1 teaspoon basil
- 1 teaspoon oregano
- 12 teaspoon tarragon
- 13 cup small shell pasta (or whatever other small pasta you have around)
- Par-boil sweet potatoes in water until almost tender (about 5 minutes).
- Do not drail.
- Add broccoli, tomatoes, radishes and spices.
- Return mixture to a boil and simmer for 8-10 minutes.
- Add pasta.
- Continue to simmer until pasta is tender.
- Serve and enjoy.
