Three Bean And Franks Bake
- 1 tbsp. vegetable oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 each red and green bell peppers, seeded and coarsely chopped
- 1 can (16 oz.) butter or lima beans, drained
- 1 can (16 oz.) vegetarian baked beans
- 1 can (16 oz.) red or kidney beans, drained
- 1/2 c. ketchup
- 1/2 c. packed light brown sugar
- 2 Tbsp. cider vinegar
- 1 Tbsp. deli mustard
- 1 pkg. (12 oz.) franks, cut into 1 inch pieces
- Preheat oven to 350u0b0. Heat oil in large saucepan over medium heat; add onion and garlic and cook 8 minutes, stirring occasionally. Add red and green peppers; cook 5 minutes, stirring occasionally. Stir in baked, butter and red beans, ketchup, brown sugar, vinegar and mustard; bring to a boil. Stir franks into bean mixture. Transfer mixture to 2 qt. casserole or 8 or 9 inch square baking dish. Bake 40 to 45 minutes or until hot and bubbly. Makes 6 servings.
