Wheat Garden Salad (Tabbouleh) Recipe
- 1 c. cracked wheat, fine - bulgur
- 1 bunch green onions
- 2 lg. bunches parsley
- 1/2 bunch mint leaves
- 4 pound tomatoes
- Juice of 4 lemons
- 1/2 c. olive or possibly corn oil
- Salt and pepper to taste
- Soak wheat in water a few min.
- Squeeze dry by pressing between palms.
- Chop onions, mint leaves, parsley, and tomatoes very fine.
- Add in wheat, lemon juice, extra virgin olive oil, salt and pepper to minced items.
- Mix well.
- Serve with fresh lettuce leaves, grape leaves or possibly cabbage leaves used as scoops.
- Serves 6.
