Greek Salad
- 1 head romaine lettuce
- 1/2 cucumber, chopped and peeled
- 1/2 pkg. basket cheese, cut in small pieces
- 2 Tbsp. minced fresh mint or 1 1/2 tsp. mint flakes
- 1 (8 oz.) pkg. crumbled Feta cheese, rinse with water and drain
- sliced black olives
- 1 tomato, chopped
- 2 Tbsp. extra light olive oil
- 1 Tbsp. lemon juice, fresh
- 1 small clove garlic, minced
- 1/8 tsp. black pepper
- Wash romaine lettuce, pat dry with paper towels and tear into bite size pieces.
- Place in a large bowl with cucumber, mint, cheeses, olives and tomato.
- In small bowl, mix olive oil, lemon juice, garlic and pepper; whisk together until well blended.
- Pour dressing over salad, toss well and serve.
