Bacon-Wrapped Barbecue Potato Wedges

  1. Preheat oven to 425 F. Line a rimmed baking sheet with parchment or aluminum foil.
  2. Lightly grease an oven-safe baking rack and place it on top of the baking sheet.
  3. Cut each potato into 8 wedges (tutorial on related blog link).
  4. Place the wedges in a bowl and drizzle with canola oil.
  5. Sprinkle with seasoned salt, garlic powder, and a pinch of salt and pepper.
  6. Toss until the potatoes are evenly coated.
  7. Wrap each potato wedge with a piece of bacon.
  8. Place the wedges on the pan in a single layer.
  9. Bake for 25 minutes.
  10. Remove from the oven.
  11. Brush each potato wedge with a thin layer of barbecue sauce.
  12. Bake for an additional 10 minutes.
  13. Serve with extra barbecue sauce if desired.
