Chicken Chile Verde
- 1 lb ground chicken
- 1 cup onion, chopped
- 2 teaspoons garlic, minced
- 1 teaspoon ground cumin
- 12 teaspoon dried oregano
- 12 teaspoon salt
- 1 cup salsa verde (bottled)
- 2 teaspoons olive oil
- 19 ounces chickpeas, drained
- cilantro
- scallion
- monterey jack cheese
- tortilla chips
- Heat oil and cook meat, onions and garlic.
- Add spices and chicken broth.
- Cover and simmer for 5 minutes.
- Stir in peans and salsa and heat through.
- Serve with cilantro, scallions, cheese and chips.
