Shortys Espinaca Spinach Dip

  1. Peel and finely dice the scallions .
  2. Wash. core and dice the tomato.
  3. Place the spinach in a mesh strainer.
  4. Press or squeeze to remove the liquid.
  5. Shred or cut the cheese into smaller pieces to make melting easier.
  6. Using a double boiler, heat the Half & Half.
  7. Add the cheese and stir constantly as the cheese melts.
  8. When the cheese is completely melted, remove the mixture from the heat, Fold in the scallions , tomato and the spinach.
  9. Stir to combine.
  10. Alternatively this can be done with a microwave, melt the cheese then add the other ingredients.
  11. Serve warm with pita chips, crackers or tortilla chips.
