Ten Minute Gourmet Gazpacho Recipe

  1. In blender, place tomato juice, cool consomme, bread crumbs, extra virgin olive oil, salt and lemon juice.
  2. Peel and add in garlic cloves.
  3. Cover and run blender high speed for 1 minute.
  4. Chop tomato, peeled cucumber and scallions into thumbnail size pcs and place in individual bowls.
  5. Place ice cubes in bowls and pour mix in blender over vegetables.
  6. Remove ice cubes.
  7. (Serves 2; just double amounts for 4, etc.)
