Homemade Banana Pudding
- 1 c. sugar
- 1 Tbsp. cornstarch
- 3 eggs
- 2 c. milk
- 1 tsp. vanilla
- 1/2 stick margarine
- pinch of salt
- 1 pkg. or box vanilla wafers
- 4 to 6 bananas
- Separate egg yolks from whites; set whites aside.
- Mix sugar, flour, egg yolks, milk, vanilla, butter and salt in a boiler (that will not stick) over medium heat.
- Beat egg yolks before adding to flour mixture.
- Bring to boil, stirring often.
- Continue cooking until it is as thick as you like.
- Lay vanilla wafers in bottom of medium casserole dish.
- Slice bananas and arrange them on top of wafers.
- Pour pudding on top of wafers and bananas.
- Chill until thickened.
- Whip egg whites and 1/2 cup sugar until stiff.
- Spread on top of finished pudding.
- Bake until brown.
