Fabulous Tongue Tingling Potato Salad
- 5 lb. red potatoes
- 1 green pepper, diced
- 1 red pepper, diced
- 1 (8 oz.) jar pickle relish
- 1 (32 oz.) Miracle Whip or mayonnaise
- 1/2 c. finely diced onions (optional)
- 1 c. shredded carrots (optional)
- 4 stalks crisp celery, diced
- 6 boiled eggs
- 1/4 tsp. paprika
- 1 (8 oz.) bottle yellow or golden spicy mustard
- pepper, sugar and seasoned salt to taste
- fresh parsley leaves
- Peel and cut potatoes into cubes.
- Boil in water until tender. While potatoes are boiling, dice peppers, onions, celery and carrots.
- Boil eggs on high for 5 minutes, then cool in cold water.
- Peel eggs and dice.
- Put all diced ingredients in large bowl.
- Drain cooked potatoes and add to diced vegetables.
- Add Miracle Whip, relish and mustard; season with pepper, sugar and seasoned salt to taste.
- Stir well to blend all the ingredients. Sprinkle finished salad with paprika.
- Garnish with fresh parsley leaves.
