Squash Frittata Squares
- 1/2 cup bread cubes
- 1/2 cup milk
- 4 eggs
- 1 salt to taste
- 1 pepper to taste
- 1/4 cup chopped parsley
- 1/4 cup grated parmesan cheese
- 1 tbsp olive oil
- 1 grated garlic clove
- 1 shredded yellow squash
- Soak bread cubes in milk for 5 minutes.
- Whisk with eggs, and salt and pepper.
- Add parsley, parmesan cheese, garlic and squash.
- Heat olive oil in a small ovenproof skillet.
- Add the egg mixture and cook for 5 minutes.
- Then bake at 375F until set, approximately 20 minutes.
- Cut into pieces and serve.
