Baked Tuna Stuffed Potatoes

  1. Preheat oven to 400u0b0.
  2. Wash potatoes.
  3. Rub skins all over with margarine.
  4. Prick with fork.
  5. Bake on oven rack 1 1/2 hours or until tender.
  6. Meanwhile in a medium bowl, combine tuna, onion, parsley, soup, paprika, Tabasco and salt.
  7. Toss with fork, to break up tuna and to blend well.
  8. Remove 1-inch slice from top of each potato.
  9. Scoop out inside of potatoes leaving a shell.
  10. Add potatoes to tuna mixture, tossing to mix well.
  11. Spoon lightly into potato shells.
  12. Mound high top of each with 1/2 slice cheese. Place in shallow baking pan.
  13. Bake 15 minutes or until filling is hot and cheese is melted.
  14. Makes 8 servings.
