Puertorican WHITE Rice and Beans
- 2 cup white rice
- 2 can 15 oz pink or red beans with sauce
- 4 tbsp sofrito (easier to find the Goya brand in freezer aisle)
- 1/4 cup diced onions
- 1 envelope sazon (Spanish seasoning)
- 1 1/2 tbsp adobo (Spanish season salt)
- 1 tsp salt
- 1 tsp black pepper
- 1 large potato, quartered
- 1 can 4 oz tomato sauce
- 5 each spanish green olives with pimento
- 1/2 cup chicken broth or water
- Boil rice as directed on package with salt (usually every cup of rice is 2 cups of water).
- Set aside.
- In a medium pan, heat sofrito & onion until onion almost translucent.
- Combine rest of ingredients, EXCEPT RICE, & bring to a boil.
- Then simmer until potatoes are fork tender.
- About 30 minutes.
- If needed add a little chicken broth or water to keep saucy.
