Puertorican WHITE Rice and Beans

  1. Boil rice as directed on package with salt (usually every cup of rice is 2 cups of water).
  2. Set aside.
  3. In a medium pan, heat sofrito & onion until onion almost translucent.
  4. Combine rest of ingredients, EXCEPT RICE, & bring to a boil.
  5. Then simmer until potatoes are fork tender.
  6. About 30 minutes.
  7. If needed add a little chicken broth or water to keep saucy.
