Fresh Mozzarella Stuffed Jumbo Shrimp
- 2-1/4 cups dry bread crumbs
- 6 Tbsp. parsley, chopped
- 1 Tbsp. garlic, chopped
- 3/4 cup Parmesan cheese, grated
- 1-1/2 tsp.
- salt
- 3/4 cup Melted butter
- 1/2 cup water
- 36 jumbo shrimp, butterflied
- 36
- Combine bread crumbs, parsley, garlic, Parmesan cheese, crushed red pepper, and salt.
- Stir in melted butter and water.
- Mix well.
- Place about 1 tablespoon bread crumb mixture on each butterflied shrimp.
- Top each with 1 Cilliegine.
- Sprinkle each with any remaining bread crumb mixture.
- Arrange on a lightly greased pan and bake at 375F for 12 minutes.
- Yield: 12 Servings.
