Avocado Pasta
- 1 Avocado
- 1/2 cups Fat-free Half-and-half
- 1 Tablespoon Fresh Cilantro, Chopped
- 1 Tablespoon Freshly Grated Parmesan Cheese
- 1/2 Lime, Juiced
- 1 clove Garlic, Minced
- Salt And Pepper, to taste
- 8 ounces, weight Rotini Pasta, Cooked According To Package Instructions For Al Dente, Drained
- Slice the avocado in half and remove the core.
- Spoon out the flesh and place it in a food processor or blender with the half-and-half, cilantro, Parmesan cheese, lime juice and garlic clove.
- Blend on high until creamy.
- Season with salt and pepper to taste.
- Toss with warm pasta and serve warm or chilled.
