Chile Con Queso
- 1/2 cup yellow onion, diced
- 2 tablespoons butter
- 2 tablespoons flour
- 1 cup, plus 2 tablespoons milk
- 5 cups shredded cheese (a mix of mild cheddar and monterey jack)
- 1 cup canned diced green chiles
- 2 plum tomatoes, seeded and diced
- 1/4 cup cilantro, finely chopped
- salt to taste
- Melt butter in a saucepan over medium-low heat; add onion and cook until translucent, about 10 minutes.
