lemon coconut fairy cakes

  1. preheat the oven to gas mark 5
  2. with a wooden spoon beat the butter and sugar until soft
  3. beat in the eggs one at a time
  4. add the lemon essence
  5. with a metal spoon stir in the 2oz.
  6. coconut and flour
  7. put paper cases in the bun tin and spoon the mixture into them
  8. cook for approx 20minutes
  9. leave until cold
  10. mix the icing sugar with 1/4tsp essence and carefully add water until you have a thick spreading consistancy
  11. spread over the top of each cake
  12. sprinkle the coconut on top right away while the icing is wet
  13. and put a cherry in the middle of each
  14. leave until the icing has set then store them in an air tight tin.
