Hawaiian Chicken

  1. Drain pineapple, reserving juice.
  2. In large skillet, cook onion and celery in oil until tender.
  3. Add chicken.
  4. Blend catsup and reserved pineapple juice with enough water to make 2 1/2 cups liquid.
  5. Stir salt and black pepper into liquid mixture.
  6. Pour over chicken.
  7. Simmer 5 minutes.
  8. Dissolve cornstarch in soy sauce.
  9. Gently stir into chicken mixture.
  10. Add green pepper and pineapple. Cover and simmer 5 minutes.
  11. Prepare hot cooked rice. Serve chicken and sauce over rice.
  12. Makes 4 to 6 servings.
  13. Enjoy!
