Balkan Cucumber Salad

  1. Peel and slice cucumbers (unless they are homegrown and unwaxed, in which case, do not peel them).
  2. Combine all ingredients, except walnuts.
  3. Chill thoroughly and serve on a bed of fresh, crisp greens with walnuts on top.
  4. Garnish lavishly with tomato wedges, chopped black olives and carrot slices.
  5. Makes 4 to 6 servings.
