Mud Pie
- 1 pkg. chocolate wafers
- 1/2 c. melted butter
- 2 pt. mocha ice cream
- 1/3 c. cocoa
- 2/3 c. sugar
- 1 1/3 c. whipping cream
- 3 Tbsp. butter
- 2 tsp. vanilla extract
- 2 Tbsp. sugar
- 2 sq. unsweetened chocolate
- Preheat oven to 375u0b0.
- Crush wafers and add melted butter. Mix well with a fork and press into a 9-inch pie plate.
- Bake for 10 minutes.
- Cool.
- Spread ice cream carefully onto crust.
- Freeze 1 1/2 hours or until solid.
- In a saucepan, cook cocoa, sugar, 1/3 cup cream and butter until it is smooth and boils.
- Stir in 1 teaspoon vanilla.
- Cool but do not let mixture get too hard to pour.
- Pour sauce over frozen ice cream base.
- Freeze at least 1 1/2 hours.
- Before serving, whip remaining cream with 2 tablespoons sugar until soft peaks form.
- Add remaining vanilla and spread over pie.
- Garnish with chocolate shavings.
