Skillet Okra And Rice
- 1 tsp. vegetable oil
- 1/4 c. chopped onion
- 1/4 c. chopped green bell pepper
- 1 clove garlic, chopped
- 1 c. chopped tomato
- 2/3 c. chicken broth
- 1/2 tsp. thyme leaves
- 1/4 tsp. pepper
- 1/8 tsp. red pepper sauce
- 1 small bay leaf
- 1/3 c. uncooked regular long-grain rice
- 8 oz. okra, cut into 1/2-inch slices
- Heat oil in 10-inch nonstick skillet.
- Over medium-high heat, cook rice in oil about 3 minutes, stirring frequently, until golden brown.
- Stir in onion, bell pepper and garlic.
- Cook 5 minutes, stirring frequently, until onion begins to soften.
- Stir in remaining ingredients except okra.
- Heat to boiling.
- Reduce heat, cover and simmer until rice is tender.
- Stir in okra.
- Cover and simmer 10 minutes longer or until okra is tender.
- Remove bay leaf.
