Black Bean Dip

  1. Coarsely mash half the beans by hand.
  2. Add the remaining whole beans and all of the other ingredients, blending well.
  3. Cover and chill.
  4. Garnish with cilantro or parsley.
  5. Makes about 2 3/4 cups of dip.
  6. SUGGESTED DIPPERS: Bok Choy, Tortilla Chips, Corn Bread Croutons
