Salmon Quiches
- 1 (11 oz.) pkg. pie crust mix (2 prepared pie crusts)
- 1 (about 16 oz.) can salmon, drained and flaked
- 4 green onions, chopped (about 6 Tbsp.)
- 8 eggs
- 4 c. whipping cream or light cream
- 1 1/2 tsp. salt
- 1/2 tsp. sugar
- 1/4 tsp. cayenne red pepper
- 1 lb. bulk sausage
- softened butter
- 6 slices white bread, crust removed
- 1 1/2 c. shredded Longhorn Cheddar
- 1 tsp. salt
- 1 tsp. dry mustard
- 5 eggs
- 2 c. half and half
- Cook sausage; crumble, drain well and set aside.
- Spread bread with butter; cut into cubes.
- Place bread in a 13 x 9 x 2-inch baking dish.
- Sprinkle with sausage; top with cheese.
- Combine remaining ingredients; beat well.
- Pour over sausage, cheese and bread.
- Chill at least 8 hours.
- Bake, uncovered, at 350u0b0 for 40 to 50 minutes.
- Serve immediately.
- Makes 6 servings.
