Artichoke Quiche

  1. Preheat oven to 400u0b0.
  2. Prick pastry shell and bake 8 to 12 minutes.
  3. Remove shell and reduce temperature to 350u0b0.
  4. In butter, saute green onion.
  5. In a large bowl beat eggs, flour and cream. Stir in artichokes, pepper cheese, onion-butter mixture and Cheddar cheese, reserving 3 tablespoons.
  6. Stir until well blended. Pour into shell and bake 35 minutes.
  7. Sprinkle top with remaining cheese and bake until center is firm, about 10 minutes.
  8. Serves 6.
