Artichoke Quiche
- 1 (9-inch) pastry shell
- 2 Tbsp. butter, melted
- 1/3 c. chopped green onion
- 2 eggs
- 1 Tbsp. flour
- 2/3 c. light cream (half and half)
- 1 (14 oz.) can artichoke hearts, drained well and coarsely chopped
- 1 c. grated hot pepper cheese (about 1/4 lb.)
- 1 c. grated Cheddar cheese (about 1/4 lb.)
- Preheat oven to 400u0b0.
- Prick pastry shell and bake 8 to 12 minutes.
- Remove shell and reduce temperature to 350u0b0.
- In butter, saute green onion.
- In a large bowl beat eggs, flour and cream. Stir in artichokes, pepper cheese, onion-butter mixture and Cheddar cheese, reserving 3 tablespoons.
- Stir until well blended. Pour into shell and bake 35 minutes.
- Sprinkle top with remaining cheese and bake until center is firm, about 10 minutes.
- Serves 6.
