Pea Pot Pecan Chicken Salad
- 3 tablespoons vegetable oil
- 1 tablespoon sesame oil
- 2 tablespoons rice vinegar
- 1 12 tablespoons soy sauce
- 18 teaspoon cayenne
- 1 pinch allspice
- 3 cups shredded cooked chicken breasts
- 4 scallions, chopped
- 34 lb fresh pea pods, trimmed
- 34 cup toasted pecan halves
- In a large bowl, combine vegetable oil, sesame oil, vinegar, soy sauce, cayenne and allspice.
- Mix to blend well.
- Add chicken, scallions, pea pods and pecans.
- Toss to coat well.
