Pasta With Oven Roasted Tomato Sauce

  1. Cut Tomatoes in half lengthwise.
  2. Place cut side up in a 9 x 13 baking pan.
  3. Sprinkle with Salt & Pepper.
  4. In a small bowl combine garlic,1/4 Cup olive oil, 1/4 cup basil and 1/4 cup parsley.
  5. Spread over Tomatoes.
  6. Bake in preheated 425 oven about 70 minutes until tops are slightly charred.
  7. Cool 15 minutes.
  8. Squeeze pulp from tomatoes into a bowl.
  9. Discard skins.
  10. Coarsely chop pulp.
  11. Stir in remaining olive oil, parsley and basil.
  12. Meanwhile cook pasta in boiling salted water about 8 minutes, or until tender.
  13. Toss with sauce.
  14. Sprinkle with parmesan.
