Triple Chip Oatmeal Cookies
- 1 cup butter, softened
- 1 cup white sugar
- 1 cup brown sugar, packed
- 3 eggs
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 3 cups old-fashioned oatmeal
- 1 cup unsweetened coconut
- 23 cup chocolate chips
- 23 cup white chocolate chips
- 23 cup butterscotch chips
- Preheat oven to 350 degrees F. Cover cookie sheets with parchment paper.
- In a medium bowl, cream together butter, white sugar and brown sugar.
- Beat in eggs one at a time, stir in vanilla.
- Combine flour, baking soda, salt; stir into creamed mixture.
- Mix in oats, coconut and chips.
- Drop dough by large tablespoons (I use a small cookie scoop) onto prepared cookie sheets, 2 inches apart.
- Bake cookies for 14 minutes in preheated oven.
- Allow cookies to cool on baking sheet for a couple of minutes before removing to a wire rack to cool completely.
