Pastelon De Amarillo (Sweet Plantain Dish)

  1. Put your 2 1/2 pounds of meat to cook on medium heat until browned.
  2. Once the meat is cooked discard the oil that the meat released.
  3. Add the 2 tablespoons of sofrito, and all your seasonings until your preference.
  4. Add your spaghetti sauce.Turn off when done.
  5. Peel and cut the 8 piece of sweet plantains into pieces.
  6. Put to boil until cooked.
  7. Once cooked strain.
  8. You would now need a potatoe masher or a fork.
  9. In bowl start to mash the sweet plantains adding one tablespoons of butter at a time.
  10. Preheat oven to 375
  11. Take your glass dish and spray with cooking spray.
  12. Start to add a layer of sweet plantain using half of your plantains.
  13. On top of that add your cooked and seasoned ground meat.
  14. Add the last layer of sweet plantains.
  15. Spread the sauce you have left.
  16. Then top using your shredded mozarella cheese and cheddar cheese.
