Special Parsnip Mashed Potatoes #SP5

  1. Place parsnips in a large pot, cover with cold water, and cook until fork tender.
  2. Drain.
  3. Return parsnips to the pot.
  4. Add the half- and- half and mash.
  5. Stir in contents of the mashed potatoes into the pot with the parsnips.
  6. Return pot to burner and heat over medium heat until hot.
  7. Stir in cheddar cheese and bacon.
  8. Serve as a side dish or as a meal with a salad.
