Crunchy-Topped Fish Fillets
- 3 slices grain bread
- 1 courgette, grated
- 50 g parmesan cheese, grated
- 2 garlic cloves, crushed
- 1 lemon zest
- 14 teaspoon salt
- 14 teaspoon pepper
- 4 white fish fillets (tarakihi, garnered, or snapper)
- Preheat oven to 180 degrees C.
- Make the bread into breadcrumbs in a food processor.
- Mix in the remaining ingredients except the fish.
- Prepare and oven tray with baking paper, then lay fish fillets on the tray.
- Spoon bread crumb mixture on top of fish.
- Baked for 30min or until the fish is cook.
- Serve straight away.
