Marinated Tomatoes

  1. Combine the olive oil, red wine vinegar and balsamic vinegar in a bowl and whisk until emulsified.
  2. Add the salt and pepper and whisk to mix well.
  3. Arrange the tomatoes in a 9x13-inch dish.
  4. Sprinkle with the garlic and basil.
  5. Pour the vinegar mixture evenly over the top.
  6. Marinate in the refrigerator for 12 hours.
  7. Top with asiago cheese.
