Marinated Tomatoes
- 1/4 cup olive oil
- 1 tablespoon red wine vinegar
- 1 tablespoon balsamic vinegar
- 1/4 teaspoon sea salt
- 1/4 teaspoon freshly ground pepper
- 3 beefsteak tomatoes, thinly sliced
- 1 garlic clove, minced
- 3 tablespoons chopped fresh basil
- Shaved asiago cheese
- Combine the olive oil, red wine vinegar and balsamic vinegar in a bowl and whisk until emulsified.
- Add the salt and pepper and whisk to mix well.
- Arrange the tomatoes in a 9x13-inch dish.
- Sprinkle with the garlic and basil.
- Pour the vinegar mixture evenly over the top.
- Marinate in the refrigerator for 12 hours.
- Top with asiago cheese.
