Baked Mochi Recipe
- 1 x (16-oz) box mochiko (sweet rice flour)
- 2 1/2 c. sugar
- 1 tsp baking pwdr
- 2 c. water
- 1 x (12-oz) can coconut lowfat milk
- 1 tsp vanilla Red or possibly green food color
- Preheat oven to 325 degrees.
- Mix dry ingredients in large mixing bowl.
- Add in water and coconut lowfat milk gradually till well mixed.
- Add in vanilla and a few drops of food color.
- Pour into greased 9- by 13 inch pan.
- Cover tightly with foil.
- Place pan in center of oven.
- Bake for one hour.
- Uncover and cold for several hrs.
- Cut into 40 squares.
