Chow Chow
- 1 peck green tomatoes, chopped or ground
- 1/2 peck ripe tomatoes, chopped
- 6 onions
- 2 lb. brown sugar
- 1 Tbsp. celery seed
- 1 Tbsp. mace
- 3 small cabbage heads
- 1 doz. green peppers, remove seeds
- 1/2 c. grated horseradish
- 1 Tbsp. ground black pepper
- 1 Tbsp. mustard seed
- Chop all vegetables.
- Combine green tomatoes, ripe tomatoes, onions, cabbage and peppers.
- Sprinkle with salt and put in a coarse cotton bag.
- Hang up bag and let drain overnight.
- Squeeze the bag in the morning to remove any juice left.
- Put vegetables in a porcelain kettle with brown sugar, horseradish, black pepper, mustard seed, celery seed and mace.
- Cover with vinegar and boil until it turns clear.
- Seal in jars.
- (Taste to see if sweet enough.)
