Nutty Pumpkin Bread Pudding

  1. In a large bowl, combine egg yolks, pumpkin, brown sugar, brandy and spices.
  2. Stir in milk.
  3. Fold in bread cubes, pecans and dates.
  4. Fold in stiffly beaten egg whites.
  5. Turn mixture into a 10 x 6 x 2-inch baking dish.
  6. Bake in a 325u0b0 oven for 45 to 50 minutes or until knife inserted near center comes out clean. Serve warm with light cream or whipped cream.
  7. Makes 8 servings.
