Pancetta, Diced Potato and Spinach Soup #5FIX

  1. Chop Pancetta into small cubes.
  2. In a large soup pot, toss in Pancetta and Simply Potatoes Diced Potato with Onion.
  3. Cook over Medium heat until Pancetta is crispy.
  4. Drain off any fat.
  5. Return pot to meduim heat.
  6. Stir in Tomato Paste until potatoes are evenly coated.
  7. Once the potatoes are coated, pour in Chicken Broth.
  8. Bring to a medium boil then reduce to a simmer.
  9. Simmer for 30min.
  10. until potatoes are tender.
  11. Add Spinach and cook for an additional 5min.
  12. until Spinach is wilted.
