Cedar-Planked Honey-Spiced Chicken

  1. Immerse planks in water, placing weight on top of each plank to keep it submerged.
  2. Soak at least 4 hours or up to 24 hours.
  3. Heat grill to medium heat.
  4. Remove planks from water; brush tops of planks with oil.
  5. Place 2 chicken breasts on each plank.
  6. Place on grate of grill; cover with lid.
  7. Grill 30 min.
  8. Meanwhile, mix dressing, honey, mustard and seasonings until blended.
  9. Reserve 1/2 cup of the dressing mixture to serve with the cooked chicken; brush chicken lightly with some of remaining dressing mixture.
  10. Grill 30 to 45 min.
  11. or until chicken is done (165 degrees F), brushing occasionally with remaining dressing mixture.
  12. Remove chicken from grill; discard planks.
  13. Remove bones from chicken; cut each breast in half.
  14. Serve with reserved dressing mixture.
