Black Vinegar Trotters Recipe
- 1 x pig's trotter (1.5kg) - cut into serving pcs
- 400 ml black vinegar
- 500 ml water
- 200 gm old ginger - skinned and smashed lightly
- 300 gm brown sugar
- 1 Tbsp. light soy sauce
- 1 x salt to taste
- Method:BLANCH trotter pcs in boiling water.
- Remove and drain well.
- Heat 2 tbsp sesame oil and 1 tbsp veg.
- oil, fry ginger until golden and aromatic.
- Dish out and transfer ginger into a claypot and add in the black vinegar, water and brown sugar then bring to a boil.
- Simmer for 30 min until ginger turns soft.
- Add in the trotter and simmer until it is soft and tender.
- Bring a steamer with water to a rolling boil.
- Place the deep dish with the bundle of herbal chicken to steam for 1 to 1 1/2 hrs.
- Top up the water in the steamer if necessary.
- When done, remove dish, open up the bundle and serve warm.
