Turkey, Corn and Mushroom Niblets

  1. Heat 1 tablespoon of oil in a wok or skillet on medium-high heat.
  2. Add turkey and stir-fry ground turkey with a dash of salt, breaking the turkey apart, until browned.
  3. Remove turkey from the skillet and set aside.
  4. Add mushrooms into the skillet and cook for 2-3 minutes, then tip in the corn and stir fry for another minute.
  5. Add salt and 1/3 cup water and simmer, stirring occasionally, until the water has evaporated.
  6. Turn heat up to high, add pork back into the skillet and stir-fry a little more.
  7. Add scallions, white pepper and toss to incorporate.
