Cheddar Cheese Spread

  1. Scrape the Camembert lightly if it is very ripe.
  2. Place in a medium bowl; cover with wine and let stand for 24 hours at room temperature.
  3. Drain off wine, reserving one tablespoon.
  4. In bowl, combine cheese and butter; mash to a smooth paste.
  5. Add reserved wine and chopped pistachios; blend thoroughly.
  6. Chill mixture and reshape like the original cheese.
  7. Coat with ground pistachios. Chill.
