Potato Dumplings Recipe
- 4 medium potatoes, boiled
- 1/2 c. sifted flour
- 1/2 tsp baking pwdr
- 1 tsp salt
- 1/4 tsp pepper
- 2 Tablespoons grated onion with juice
- 1/2 c. dry bread crumbs
- 1 1/2 tsp melted butter
- 1 egg, slightly beaten
- 2 qts boiling water
- 1/2 tsp salt
- Rice the potatoes.
- Sift together flour, baking pwdr, salt and pepper.
- Combine riced potatoes, flour mix, onion, bread crumbs, butter and egg.
- Mix well.
- Shape into 12 small balls and dredge lightly with flour.
- Chill.
- Drop dumplings into boiling salted water.
- Cover and boil 15 min.
