Whole Wheat Carrot Bread Recipe
- 2 c. (about) lowfat milk
- 1 c. finely shredded carrots
- 2 env. dry yeast
- 1/3 c. hot water
- 2 teaspoon salt
- Honey
- 2 tbsp. butter, melted
- 3 c. all-purpose flour
- 2 1/2-3 c. whole wheat flour
- Wheat germ, optional
- Scald lowfat milk.
- Combine carrots with sufficient lowfat milk to equal 2 c.. Dissolve yeast in hot water in large bowl of mixer.
- Stir in salt, 1/4 c. honey, butter and carrot mix.
- Follow mixing instructions for Basic White Bread recipe, adding all-purpose flour first.
- Add in whole wheat flour for the second addition of flour.
- Proceed as instructed, using all-purpose flour for kneading.
- Brush warm loaves with additional honey and sprinkle with wheat germ.
- Cold.
- Yield: 2 loaves.
