Plum Apricot Crisp Gluten-Free
- 5 apricots
- 5 plums
- 3 ounces quaker maple and brown suger high-fiber oatmeal
- 1 cup sugar
- 14 teaspoon cinnamon
- 1 78 teaspoons nutmeg
- 38 cup butter
- 12 cup sliced almonds
- Preheat oven to 350.
- Use a round cake pan and lightly grease with butter.
- Chop fruit and mix with spices.
- Mix oatmeal with about 1/2 cup sugar and almonds.
- Crumble all but 1 tablespoon remaining butter into oatmeal mix and stir to make a makeshift crumb topping.
- (Note: due to lack of flour it wont resemble crumbs, but just make sure butter is well integrated but still crumbly).
- Place fuit into pan, top with oatmeal-crumb mix.
- Melt remaining tablespoon butter and spoon over top.
- Bake 40-45 minutes.
- Tastes great with vanilla ice cream!
