Plum Apricot Crisp Gluten-Free

  1. Preheat oven to 350.
  2. Use a round cake pan and lightly grease with butter.
  3. Chop fruit and mix with spices.
  4. Mix oatmeal with about 1/2 cup sugar and almonds.
  5. Crumble all but 1 tablespoon remaining butter into oatmeal mix and stir to make a makeshift crumb topping.
  6. (Note: due to lack of flour it wont resemble crumbs, but just make sure butter is well integrated but still crumbly).
  7. Place fuit into pan, top with oatmeal-crumb mix.
  8. Melt remaining tablespoon butter and spoon over top.
  9. Bake 40-45 minutes.
  10. Tastes great with vanilla ice cream!
