Chinese Almond Cookies

  1. Heat oven to 350F.
  2. Combine butter and sugar in bowl.
  3. Beat at medium speed, scraping bowl often, until creamy.
  4. Add egg and almond flavoring; beat until well mixed.
  5. Add flour, baking powder and salt; beat at low speed until well mixed.
  6. Shape dough into 1 1/4-inch balls.
  7. Place 2 inches apart onto ungreased cookie sheet.
  8. Flatten slightly; press almond into center of each cookie.
  9. Beat egg yolk with water in bowl; brush cookies evenly with egg mixture.
  10. Bake for 11-15 minutes or until just set.
