Hanoi Noodle Soup

  1. Combine the stock, star anise, cinnamon stick, ginger, onion, and cloves in a large, deep saucepan and turn heat to high.
  2. Bring to a boil, then turn the heat down very low andcover.
  3. Let cook for 20-60 minutes.
  4. Strain and return to the sauce pan.
  5. Soak the rice noodles in hot water for 15-30 minutes, until soft.
  6. Rinse under cold water for a minute, then drain.
  7. Turn the heat from the soup to medium, then place the meat in the pot and cook for 2 minutes, stirring occasionally.
  8. Divide the noodles among four large bowls.
  9. Add the fish or soy sauce and plenty of pepper to the soup.
  10. Taste and add the salt or more seasoning to taste.
  11. Top the noodles with broth and meat, then garnish with cilantro.
  12. Serve with the lime wedges and minced chile.
