Massachusetts Harvard Beets
- 2 tsp. cornstarch
- 1/3 cup sugar
- 1/2 tsp. salt
- 1/8 tsp. pepper
- 2/3 cup vinegar
- 1/3 cup water
- beet liquid
- 3 cups sliced cooked beets
- 1 tbsp. butter
- Mix cornstarch with sugar, salt and pepper.
- Stir in vinegar and water.
- Cook over low heat, stirring constantly until mixture is smooth and thickened.
- Add cooked beats and reheat.
- Stir in butter just before serving.
